Lion’s Mane mushroom, also known as Hericium erinaceus, is a highly valued species in both cuisine and natural medicine. It is distinguished by its unique appearance—its fruiting bodies resemble a white, fluffy sphere covered with cascading spines. Its flavor is delicate and slightly sweet, with distinct notes reminiscent of seafood, making it a unique ingredient in plant-based cuisine. Fresh Lion’s Mane is excellent for frying, baking, and stewing, as well as serving as a base for vegetarian and vegan dishes and in fusion cuisine.
